Rainbow Veggie Bowl with Cilantro Tahini Dressing

Ingredients

  • 1 cup cooked brown rice or quinoa
  • Assorted colorful vegetables
  • Marinated tofu

Cilantro tahini dressing

  • 1/2 cup tahini
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 2 garlic cloves, chopped
  • 6 sprigs cilantro
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • Handful of spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar

Preparation

  1. Cook the brown rice or quinoa according to package directions.

  2. Prepare the colorful vegetables by cooking them to your preference, such as steaming, roasting, or sautéing.

  3. Add all the dressing ingredients to a blender and blend until smooth and creamy.

  4. Layer the cooked grains, vegetables, marinated tofu, and cilantro dressing in a bowl.
