Rainbow Veggie Bowl with Cilantro Tahini Dressing

Ingredients

  • 1 cup cooked brown rice or quinoa
  • Assorted colorful vegetables
  • Marinated tofu

Cilantro tahini dressing

  • 1/2 cup tahini
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 2 garlic cloves
  • 6 sprigs cilantro
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • Handful of spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar

Preparation

  1. Add all the ingredients for the tahini dressing to a blender and mix until smooth and creamy.

  2. Layer the cooked grains, vegetables of choice, marinated tofu, and cilantro dressing in a bowl.
