Rainbow Veggie Bowl with Cilantro Tahini Dressing
Ingredients
- 1 cup cooked brown rice or quinoa
- Assorted colorful vegetables
- Marinated tofu
Cilantro tahini dressing
- 1/2 cup tahini
- 1/2 cup water
- 1/4 cup lemon juice
- 2 garlic cloves
- 6 sprigs cilantro
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger
- Handful of spinach
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
Preparation
Add all the ingredients for the tahini dressing to a blender and mix until smooth and creamy.
Layer the cooked grains, vegetables of choice, marinated tofu, and cilantro dressing in a bowl.
