Green Goddess Lentil Nourish Bowl

Ingredients

Bowl

  • 1 cup green lentils
  • 1 bunch lacinato kale
  • 2 zucchinis
  • 2 English cucumbers
  • 2 cups green peas
  • 3 cups green beans
  • 1/4 cup pumpkin seeds
  • 1/4 cup fresh parsley

Green goddess sauce

  • Juice of 3 lemons
  • 1/2 cup plain coconut milk yogurt or 1 ripe avocado
  • 1 jalapeño
  • 1/2 bunch cilantro
  • 1/2 bunch parsley
  • Handful of mint
  • 1 garlic clove
  • Salt and pepper to taste
  • 1 teaspoon maple syrup
  • 1 tablespoon fresh ginger
  • 1/2 cup water

Preparation

  1. Massage the chopped kale with juice of 1 lemon and 1 teaspoon olive oil until tender.

  2. Blanch the green beans in boiling water until tender.

  3. Bring a medium pot of water to a boil, add lentils, and simmer for 12-15 minutes until tender but not mushy.

  4. Add all sauce ingredients to a blender and purée until creamy, then season to taste.

  5. Add all prepared ingredients to bowls and drizzle with sauce right before serving.

Notes

  1. This recipe serves 6 and is great for meal prep.
