Green Goddess Lentil Nourish Bowl
Ingredients

- 1 cup green lentils
- 1 bunch lacinato kale
- 2 zucchinis
- 2 English cucumbers
- 2 cups green peas
- 3 cups green beans
- 1/4 cup pumpkin seeds
- 1/4 cup fresh parsley
Green goddess sauce
- Juice of 3 lemons
- 1/2 cup plain coconut milk yogurt or 1 ripe avocado
- 1 jalapeño
- 1/2 bunch cilantro
- 1/2 bunch parsley
- Handful of mint
- 1 garlic clove
- Salt and pepper to taste
- 1 teaspoon maple syrup
- 1 tablespoon fresh ginger
- 1/2 cup water
Preparation
Massage the chopped kale with juice of 1 lemon and 1 teaspoon olive oil until tender.
Blanch the green beans in boiling water until tender.
Bring a medium pot of water to a boil, add lentils, and simmer for 12-15 minutes until tender but not mushy.
Add all sauce ingredients to a blender and purée until creamy, then season to taste.
Add all prepared ingredients to bowls and drizzle with sauce right before serving.
Notes
This recipe serves 6 and is great for meal prep.
