Rainbow Nourish Noodle Bowl
Ingredients
- 2 servings noodle of choice, cooked, rinsed, and cooled
- 1 cup purple cabbage, shredded
- 1/2 cup red beet, sliced
- 1 red bell pepper, chopped
- 1 carrot, julienned and chopped
- 1/2 cup yellow corn
- 1 English cucumber, ribboned with spiralizer or peeler
- 1 cup lacinto kale, chopped and massaged with 1/2 lemon juiced
- 1/2 cup edamame
- 2 tablespoons cashews, toasted
- 1 tablespoon sesame seeds
- Fresh mint and cilantro, for garnish
Mango green goddess sauce
- 1 ripe yellow mango, peeled
- 1 avocado, peeled
- 2-3 limes, juiced
- 1/2 - 1 jalapeño, adjust for desired spice
- 1 garlic clove
- 1 cup cilantro
- 1/2 cup mint
- 1 tablespoon fresh ginger
- 1/2 teaspoon salt
- Water, as needed, to thin
Preparation
Add all the noodle bowl ingredients to serving bowls.
Place the sauce ingredients in a blender and blend until smooth. Add water if needed to thin, and adjust lime, garlic, salt, and jalapeño to your liking.
Add the sauce to the bowls right before serving.
