Vegan Rainbow Burrito Bowl

Ingredients

Bowl components

  • kale
  • arugula
  • purple cabbage
  • cous cous
  • mangoes
  • charred corn
  • cilantro

Black beans

  • 1 can organic black beans
  • 1 pinch salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Guacamole

  • 1 avocado
  • 1/2 lime or lemon
  • Pinch salt
  • Pinch fresh cilantro

Preparation

Cous cous

  1. Cook cous cous according to package instructions.

Corn

  1. Char the corn by grilling or pan-frying until slightly blackened.

Black beans

  1. Open the can, put in a pan, add spices and heat until hot.

Guacamole

  1. Put ingredients in a bowl and mash with a fork.

Assembly

  1. Assemble your bowl with hardy greens on the bottom.
