Rainbow Nourish Noodle Bowl with Mango Green Goddess Dressing

Ingredients

Bowl

  • 2 servings noodle of choice, cooked, rinsed, and cooled
  • 1 cup purple cabbage, shredded
  • 1/2 cup red beet, sliced
  • 1 red bell pepper, chopped
  • 1 carrot, julienned and chopped
  • 1/2 cup yellow corn
  • 1 English cucumber, ribboned with spiralizer or peeler
  • 1 cup lacinto kale, chopped and massaged with 1/2 lemon juiced
  • 1/2 cup edamame
  • 2 tablespoons cashews, toasted
  • 1 tablespoon sesame seeds
  • fresh mint, for garnish
  • fresh cilantro, for garnish

Mango green goddess sauce

  • 1 ripe yellow mango, peeled
  • 1 avocado, peeled
  • 2-3 limes, juiced
  • 1/2 - 1 jalapeño, adjust for desired spice
  • 1 garlic clove
  • 1 cup cilantro
  • 1/2 cup mint
  • 1 tablespoon fresh ginger
  • 1/2 teaspoon salt
  • water, as needed, to thin

Preparation

  1. Add all ingredients for the bowl to serving bowls.

  2. Place sauce ingredients in a blender and blend until smooth. Add water if needed to thin. Adjust lime, garlic, salt, and jalapeño to your liking.

  3. Add sauce to the bowls right before serving.

  1. These bowls are great for meal prep and can be customized with different vegetables or noodles.
