Green Goddess Lentil Nourish Bowl
Ingredients
- 1 cup green lentils
- 1 bunch lacinato kale
- 2 zucchinis
- 2 English cucumbers
- 2 cups green peas
- 3 cups green beans
- 1/4 cup pumpkin seeds
- 1/4 cup fresh parsley, finely chopped
- 1 lemon
- 1 teaspoon extra virgin olive oil
Green goddess sauce
- 3 lemons, juiced
- 1/2 cup plain coconut milk yogurt or 1 ripe avocado
- 1 jalapeño
- 1/2 bunch cilantro
- 1/2 bunch parsley
- handful of mint
- 1 garlic clove
- salt and pepper
- 1 teaspoon maple syrup
- 1 tablespoon fresh ginger
- 1/2 cup water
Preparation
Bring a medium pot of water to a boil. Add the lentils and simmer for 12-15 minutes until tender but not mushy.
Chop the lacinato kale, drizzle with juice from 1 lemon and 1 teaspoon extra virgin olive oil, and massage until tender.
Blanch the green beans in boiling water until tender.
Prepare the vegetables by ribboning or peeling the zucchinis and chopping the English cucumbers and fresh parsley.
Add all ingredients for the Green Goddess Sauce to a blender and purée until creamy. Season to taste.
Assemble the nourish bowls by adding all the prepared ingredients and drizzle with the sauce right before serving.
Notes
This recipe serves 6 and is great for meal prep.
For the sauce, use 1/2 cup plain coconut milk yogurt or 1 ripe avocado, or a combination of both.
