Tofu and Edamame Buddha Bowl

Ingredients

  • Edamame
  • Extra firm tofu
  • Turmeric
  • Garlic powder
  • Nutritional yeast
  • Oil
  • Tamari
  • Wonton wrappers
  • Tahini
  • Kale
  • Lemon
  • Red onion
  • Hemp seeds
  • Purple cabbage
  • Carrots
  • Tomatoes
  • Salt and pepper
  • Sesame oil
  • Everything but the bagel seasoning

Preparation

  1. Boil edamame until tender.

  2. Season tofu with turmeric, garlic powder, nutritional yeast, and tamari, then pan fry for 5 minutes on each side.

  3. Massage kale with lemon and oil.

  4. Cut wonton wrappers into strips and fry with sesame oil and everything but the bagel seasoning until crunchy.

  5. Prepare fresh vegetables by slicing or chopping red onion, purple cabbage, carrots, and tomatoes.

  6. Assemble all ingredients in a bowl, add hemp seeds, and season with salt and pepper to taste.

  7. Drizzle with tahini and serve.
