Chickpea Ranch Salad Sandwich

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • Tahini Ranch (recipe below)
  • Bread of your choice (such as @silverhillsbakery)

Tahini Ranch

  • 3 tbsp tahini (such as @soomfoods)
  • 3 tbsp plain unsweetened plant-based yogurt
  • Juice of half a lemon
  • 2 tsp brown mustard
  • 1/2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp dried parsley
  • 2-3 sprigs fresh dill, minced
  • Salt and pepper to taste
  • 3-4 tbsp water

Preparation

  1. In a bowl, add the chickpeas and use a fork or potato masher to mash them to your desired consistency (a 50-50 mix of crushed to less crushed chickpeas is recommended).

  2. Add the Tahini Ranch dressing to the mashed chickpeas and mix well to combine.

  3. Stir in the finely diced red bell pepper and red onion.

  4. Scoop the chickpea mixture onto slices of your preferred bread.

  5. Optionally, further dress up the sandwich as desired.

  6. The chickpea salad can also be used as a filling for wraps.
