Vegan Chickpea Tuna Sandwich
Ingredients
- 400g chickpeas, drained and rinsed well
- 1 tbsp chopped herbs (dill, parsley, mint)
- 1 tbsp finely chopped nori (1/4 of a nori sheet)
- 1 tbsp vegan aioli or cashew cream
- 1 tsp lemon zest
- Juice of 1/2 lemon
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Preparation
Mash the chickpeas with a fork.
Add all the ingredients and mix well.
Serving suggestions
Load up your desired toast, top with fresh dill, vegan feta, lemon juice and avocado on the side.
