Vegan Chickpea Tuna Sandwich

Ingredients

  • 400g chickpeas, drained and rinsed well
  • 1 tbsp chopped herbs (dill, parsley, mint)
  • 1 tbsp finely chopped nori (1/4 of a nori sheet)
  • 1 tbsp vegan aioli or cashew cream
  • 1 tsp lemon zest
  • Juice of 1/2 lemon
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Preparation

  1. Mash the chickpeas with a fork.

  2. Add all the ingredients and mix well.

Serving suggestions

  1. Load up your desired toast, top with fresh dill, vegan feta, lemon juice and avocado on the side.
