Vegan Chickpea Tuna Salad

Ingredients

  • 1 can (14 oz) chickpeas (garbanzo beans), drained and rinsed
  • juice of 1/2 lemon
  • 1 1/2 tsp vegan mayo or 3 – 4 tbsp hummus
  • 1/4 cup bell pepper chopped
  • 1/4 cup olives or pickled capers chopped
  • 1/4 cup red onion (about 1/2 small), chopped
  • 2 teaspoons soy or tamarind sauce
  • salt & black pepper, to taste
  • dash of nutritional yeast, optional

Preparation

  1. Drain and rinse chickpeas, place in medium size bowl or plate and roughly mash the chickpeas with the back of a fork until desired consistency.

  2. Add the rest of the ingredients and mix well, adding any extra ingredients you like.

  3. Alternatively, use a food processor starting with the beans, pulse a few times, add remaining ingredients pulsing again a few times until desired consistency.

  4. Serve chilled or at room temperature.

Tips

  1. This vegan tuna salad tastes remarkably close to actual tuna and is great for sandwiches.
