Fall Chickpea Salad with Cranberries and Walnuts

Ingredients

  • 3 cups cooked chickpeas (or 2 cans, drained and rinsed)
  • 2-4 tablespoons vegan mayo
  • 2 teaspoons Dijon mustard
  • 1 rib celery
  • 1/4 small red onion
  • 1/3 cup raw walnuts
  • 1/3 cup dried cranberries
  • Juice of 1/2 lemon

Preparation

  1. Add all ingredients to a bowl and mash lightly.

  2. Enjoy with salad, in a sandwich or wrap.

Tips

  1. We love our sammies loaded with fresh spinach or layered with a sliced apple.
