Fall Chickpea Salad with Cranberries and Walnuts
Ingredients
- 3 cups cooked chickpeas (or 2 cans, drained and rinsed)
- 2-4 tablespoons vegan mayo
- 2 teaspoons Dijon mustard
- 1 rib celery
- 1/4 small red onion
- 1/3 cup raw walnuts
- 1/3 cup dried cranberries
- Juice of 1/2 lemon
Preparation
Add all ingredients to a bowl and mash lightly.
Enjoy with salad, in a sandwich or wrap.
Tips
We love our sammies loaded with fresh spinach or layered with a sliced apple.
