Vegan Chickpea Tuna Wrap

Ingredients

  • 400g cooked chickpeas
  • 100g sweetcorn
  • 100g Garlic Mayo
  • Juice of 1 lemon
  • 1 red onion
  • 2 tbsp dulse flakes or crushed nori sheets
  • 1 tsp sea salt

Optional additions

  • Wraps
  • Salad
  • Red pepper
  • and other vegetables

Preparation

  1. Finely chop the red onion.

  2. Blend the chickpeas with the salt and lemon juice using a hand-held stick blender or mash with a fork.

  3. Stir in the mayo, red onion, sweetcorn and dulse flakes or nori.

  4. Mix well and assemble in a wrap with salad and crunchy vegetables.

Tips

  1. You can use regular or chipotle mayo instead of garlic mayo for variation.
