Vegan Chickpea Tuna Wrap
Ingredients
- 400g cooked chickpeas
- 100g sweetcorn
- 100g Garlic Mayo
- Juice of 1 lemon
- 1 red onion
- 2 tbsp dulse flakes or crushed nori sheets
- 1 tsp sea salt
Optional additions
- Wraps
- Salad
- Red pepper
- and other vegetables
Preparation
Finely chop the red onion.
Blend the chickpeas with the salt and lemon juice using a hand-held stick blender or mash with a fork.
Stir in the mayo, red onion, sweetcorn and dulse flakes or nori.
Mix well and assemble in a wrap with salad and crunchy vegetables.
Tips
You can use regular or chipotle mayo instead of garlic mayo for variation.
