Vegan Chickpea Tuna Salad

Ingredients

  • 400g cooked chickpeas
  • 1/2 red onion, diced
  • 2 celery stalks, sliced
  • 2 tbsp vegan mayo
  • 1/2 tsp cayenne
  • 1 lemon, juice and zest
  • Pinch of salt
  • Black pepper
  • 1 nori sheet, optional

Preparation

  1. Smash three-quarters of the chickpeas in a bowl

  2. Add the remaining ingredients and mix

  3. Serve by itself, in a wrap or sandwich
