Vegan Chickpea Tuna Salad
Ingredients
- 400g cooked chickpeas
- 1/2 red onion, diced
- 2 celery stalks, sliced
- 2 tbsp vegan mayo
- 1/2 tsp cayenne
- 1 lemon, juice and zest
- Pinch of salt
- Black pepper
- 1 nori sheet, optional
Preparation
Smash three-quarters of the chickpeas in a bowl
Add the remaining ingredients and mix
Serve by itself, in a wrap or sandwich
