Healthy Vegan Kale Salad Wrap
Ingredients
- 4-5 large kale leaves, stems removed and chopped
- 1/2 medium red onion, sliced thinly
- 2 cloves garlic, minced
- 2 teaspoons extra virgin olive oil
- Juice from 1/2 lemon
- Salt, to taste
- Pepper, to taste
- 1/2 cup roasted chickpeas
- Roasted potatoes
- Spinach tortilla
- Hummus
Preparation
Massage kale with olive oil and lemon juice until tender.
Add onions, garlic, salt and pepper.
Add 1/2 cup of roasted chickpeas and roasted potatoes.
Take spinach tortilla and warm up in a pan on both sides for 20 seconds.
Take the spinach tortilla, spread 1 tablespoon of hummus and add the kale salad with chickpeas and sweet potatoes.
Do not overfill it.
Carefully fold the wrap like a burrito.
Cut it in half and enjoy.
