Healthy Vegan Kale Salad Wrap

Ingredients

  • 4-5 large kale leaves, stems removed and chopped
  • 1/2 medium red onion, sliced thinly
  • 2 cloves garlic, minced
  • 2 teaspoons extra virgin olive oil
  • Juice from 1/2 lemon
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup roasted chickpeas
  • Roasted potatoes
  • Spinach tortilla
  • Hummus

Preparation

  1. Massage kale with olive oil and lemon juice until tender.

  2. Add onions, garlic, salt and pepper.

  3. Add 1/2 cup of roasted chickpeas and roasted potatoes.

  4. Take spinach tortilla and warm up in a pan on both sides for 20 seconds.

  5. Take the spinach tortilla, spread 1 tablespoon of hummus and add the kale salad with chickpeas and sweet potatoes.

  6. Do not overfill it.

  7. Carefully fold the wrap like a burrito.

  8. Cut it in half and enjoy.
