Farro and Strawberry Salad with Mint Dressing
Ingredients
- 400g cooked farro or spelt
- 220g strawberries
- 1/2 cucumber
- 1/2 avocado
- a handful of rocket or mixed greens
- 50g feta style vegan cheese
- 1/2 red onion
Mint dressing
- a bunch of mint leaves (about 20g)
- 1 garlic clove
- 1 tsp of dijon mustard
- the juice of 1 lemon
- 3 tbsp of extra virgin olive oil
- 1 tsp of maple syrup
- a generous pinch of salt and pepper
Preparation
Make the dressing by adding all the ingredients to a blender and blend until fairly smooth.
Mix all the salad ingredients in a bowl.
Drizzle with the dressing and mix again.
Enjoy.
