Farro and Strawberry Salad with Mint Dressing

Ingredients

  • 400g cooked farro or spelt
  • 220g strawberries
  • 1/2 cucumber
  • 1/2 avocado
  • a handful of rocket or mixed greens
  • 50g feta style vegan cheese
  • 1/2 red onion

Mint dressing

  • a bunch of mint leaves (about 20g)
  • 1 garlic clove
  • 1 tsp of dijon mustard
  • the juice of 1 lemon
  • 3 tbsp of extra virgin olive oil
  • 1 tsp of maple syrup
  • a generous pinch of salt and pepper

Preparation

  1. Make the dressing by adding all the ingredients to a blender and blend until fairly smooth.

  2. Mix all the salad ingredients in a bowl.

  3. Drizzle with the dressing and mix again.

  4. Enjoy.
