Dreamy Rainbow Salad with Tahini Dressing
Ingredients
Tahini poppy seed dressing
- 1/4 cup runny tahini
- 2-3 tbsp cold water
- Juice of 1 lemon
- 1 tbsp white wine or apple cider vinegar
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp poppy seeds
- Salt and black pepper to taste
Rainbow salad components
- Finely chopped kale
- Avocado
- Strawberries
- Cucumber
- Cherry heirloom tomatoes
- Red radishes
- Mini sweet peppers
- Sourdough croutons
Preparation
Whisk together all dressing ingredients until smooth and season to taste with salt and black pepper.
Mix some of the dressing with the finely chopped kale.
Top the kale with sliced avocado, strawberries, cucumber, cherry heirloom tomatoes, red radishes, mini sweet peppers, and sourdough croutons.
Serve with the remaining dressing on the side.
Tips
The dressing keeps well in the fridge for several days.
