Easy Kale and Quinoa Salad

Ingredients

  • 2 cups cooked and chilled quinoa
  • 1 cup chopped lacinato kale
  • 1 chopped celery stalk
  • 1 peeled and grated carrot
  • 2 cups shredded red cabbage
  • 10 quartered cherry tomatoes
  • 10 halved green olives

Dressing

  • 6 oz arugula
  • 1 peeled and seeded avocado
  • Juice of 1 lemon
  • Juice of 1 orange
  • 2 tablespoons white balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • Black pepper to taste

Preparation

  1. Prepare the quinoa according to the package instructions and set aside to cool.

  2. In a large bowl, combine the chopped kale, diced celery, grated carrot, shredded red cabbage, quartered cherry tomatoes, halved green olives, and cooked and cooled quinoa; set aside.

  3. In a high-speed blender, add the arugula, peeled and pitted avocado, juice from the lemon and orange, white balsamic vinegar, olive oil, salt, and pepper. Blend until smooth.

  4. Add the finished dressing to the bowl of salad and mix well until all ingredients are combined. Enjoy.
