Tomatoey French Lentil Hummus Bowl
Ingredients
Hummus
- 1 tin of chickpeas
- Juice of 1 lemon
- 2 tablespoons tahini
- 2 garlic cloves
- 3 ice cubes
- Salt
Toppings
- 1 packet Tomatoey French Puy & Green Lentils
- Tomatoes
- Cucumber
- Red onion
- Parsley
- Salt and pepper
- Extra virgin olive oil
- Pita bread
Preparation
Boil the chickpeas with bicarbonate of soda and garlic cloves until soft.
Drain the chickpeas.
Add the drained chickpeas to a food processor and blend until a paste forms.
Add the lemon juice, tahini, and salt, and blend until fairly smooth.
Add the ice cubes and blend for a few more minutes until very smooth.
Taste and adjust seasoning as needed.
Dice the tomatoes, cucumber, and red onion.
Warm the lentil packet according to package instructions.
Assemble the bowl by topping the hummus with warm lentils, diced vegetables, chopped parsley, salt and pepper, and a drizzle of extra virgin olive oil.
Serve with pita bread and enjoy.
Tips
Using dried chickpeas may make better hummus, but canned chickpeas work well for a quick meal.
