Easy Red Pepper Hummus

Ingredients

  • 3 red snack peppers
  • 240g chickpeas, cooked
  • 1/2 cup of sun-dried tomatoes
  • 2 cloves of garlic
  • 3 tablespoons of tahini
  • 1 tablespoon of olive oil
  • 1 teaspoons of cumin
  • Juice from 1/2 lemon
  • Salt and pepper

Preparation

  1. Preheat the oven to 200°C (390°F).

  2. Chop the snack pepper into small pieces, place on a baking tray, cover with 2 tablespoons of olive oil, salt and pepper, and cook for 20 minutes.

  3. In a food processor, add the baked peppers and all the remaining ingredients.

  4. Puree the mixture until smooth, scraping down the sides if necessary.

  5. If the hummus is too thick, thin it with water or extra olive oil.
