Refreshing Shirazi Cucumber and Tomato Salad

Ingredients

  • 3 large or 5 small cucumbers
  • 4 tomatoes
  • 1 red onion
  • A bunch of fresh mint
  • Juice from 1 lemon
  • Olive oil
  • Salt and pepper to taste

Preparation

  1. Chop the cucumbers, tomatoes and onions into very small cubes and add into a bowl along with chopped mint.

  2. Season with lemon juice, olive oil, salt and pepper.

  3. Mix well.

Serving suggestions

  1. Serve as is, or with vegan cream cheese and crackers.
