Refreshing Shirazi Cucumber and Tomato Salad
Ingredients
- 3 large or 5 small cucumbers
- 4 tomatoes
- 1 red onion
- A bunch of fresh mint
- Juice from 1 lemon
- Olive oil
- Salt and pepper to taste
Preparation
Chop the cucumbers, tomatoes and onions into very small cubes and add into a bowl along with chopped mint.
Season with lemon juice, olive oil, salt and pepper.
Mix well.
Serving suggestions
Serve as is, or with vegan cream cheese and crackers.
