Easy Quinoa Side Salad

Ingredients

  • 1 cup cooked quinoa
  • 2 cucumbers
  • 2 tomatoes
  • 1/2 small red onion
  • 10 black olives
  • handful fresh basil

Dressing

  • 1/2 lemon
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon balsamic vinegar
  • sea salt and ground black pepper
  • Lemon zest

Preparation

  1. Wash cucumbers and cut in half lengthwise. With a large spoon, scrape out the watery inside of the cucumber. This prevents the salad from getting soggy.

  2. Chop all ingredients into small little cubes and transfer to a bowl.

  3. Mix the dressing ingredients.

  4. Pour the dressing over the salad and enjoy!

Notes

  1. Quinoa is gluten-free, high in protein and contains sufficient amounts of all nine essential amino acids.
