Tangy Chickpea Salad with Balsamic Glaze

Ingredients

  • 1 can Chickpeas
  • 1/2 cup Fresh Basil
  • 1/4-1/2 cup Vegan Feta
  • 2 medium Tomatoes
  • 2 tbsp Extra Virgin Olive Oil
  • 1 lemon, juiced
  • Balsamic Glaze
  • Salt & Pepper to taste
  • 4-6 slices of Bread

Preparation

  1. Open the can of chickpeas, drain and rinse well, and toss in a large mixing bowl.

  2. Mince the basil and dice the tomatoes, then add them to the mixing bowl with the chickpeas.

  3. Add lemon juice, olive oil, salt, and pepper, and make sure to incorporate it well.

  4. Add the vegan feta.

  5. Eat as a salad or add to a slice of toast along with some balsamic glaze and enjoy.
