Vegan Pepita Basil Pesto

Ingredients

  • 2 cups Fresh Basil
  • 3 tbsp Pepita Seeds
  • 1 tbsp Garlic, minced
  • 1 lemon, juiced
  • 4 tbsp Nutritional yeast
  • 2 tbsp Extra Virgin Olive Oil
  • 5 tbsp water
  • Salt & Pepper to taste

Preparation

  1. Combine all ingredients in a food processor

  2. Blend until smooth and creamy

Tips

  1. To keep the pesto vibrant green and prevent browning, consider blanching the basil leaves briefly before blending or using the pesto immediately after preparation
