Easy Vegan Basil Pesto Gnocchi

Ingredients

  • 17 oz of gnocchi
  • 2 tbs of olive oil
  • Salt and pepper to taste
  • 1 handful of fresh basil
  • 1 handful of spinach
  • 2 small garlic cloves
  • 2 tbs of nutritional yeast
  • 1/3 cup of walnuts
  • Juice of 1 lemon
  • 2 tbs of water

Pesto components

  • Salt and pepper to taste

Preparation

  1. Add all ingredients to the food processor. Process until smooth and creamy.

  2. Enjoy :)

  3. In a medium-sized pan, add gnocchi and olive oil. Cook on medium-low for about 10 minutes.

  4. Remove gnocchi from the pan.

  5. Mix in your Homemade Basil Pesto in with your gnocchi

  6. Enjoy :)
