Easy Vegan Basil Pesto Gnocchi
Ingredients
- 17 oz of gnocchi
- 2 tbs of olive oil
- Salt and pepper to taste
- 1 handful of fresh basil
- 1 handful of spinach
- 2 small garlic cloves
- 2 tbs of nutritional yeast
- 1/3 cup of walnuts
- Juice of 1 lemon
- 2 tbs of water
Pesto components
- Salt and pepper to taste
Preparation
Add all ingredients to the food processor. Process until smooth and creamy.
Enjoy :)
In a medium-sized pan, add gnocchi and olive oil. Cook on medium-low for about 10 minutes.
Remove gnocchi from the pan.
Mix in your Homemade Basil Pesto in with your gnocchi
