Spinach, Pea and Walnut Pesto

Ingredients

  • 1 cup thawed frozen spinach
  • 1 cup thawed frozen peas
  • 50g toasted walnuts
  • 2 cloves garlic
  • 200 ml olive oil
  • 1/2 cup nutritional yeast
  • Juice of one lemon
  • Salt to taste

Preparation

  1. Add all the ingredients to a food processor.

  2. Add the oil gradually and process until desired consistency.

Notes

  1. The word 'pesto' comes from 'pestare', meaning to pound or crush.

  2. Pesto variations include Pesto Rosso with sun-dried tomatoes and almonds, and Pesto Calabrese with tomatoes and ricotta.

  3. Traditional Pesto Genoese uses basil, cheese, garlic, and pine nuts, but this version substitutes spinach, peas, and walnuts.
