Spinach, Pea and Walnut Pesto
Ingredients
- 1 cup thawed frozen spinach
- 1 cup thawed frozen peas
- 50g toasted walnuts
- 2 cloves garlic
- 200 ml olive oil
- 1/2 cup nutritional yeast
- Juice of one lemon
- Salt to taste
Preparation
Add all the ingredients to a food processor.
Add the oil gradually and process until desired consistency.
Notes
The word 'pesto' comes from 'pestare', meaning to pound or crush.
Pesto variations include Pesto Rosso with sun-dried tomatoes and almonds, and Pesto Calabrese with tomatoes and ricotta.
Traditional Pesto Genoese uses basil, cheese, garlic, and pine nuts, but this version substitutes spinach, peas, and walnuts.
