Homemade Basil Pesto with Gnocchi
Ingredients
- 17 oz of gnocchi
- 2 tbs of olive oil
- Salt and pepper to taste
Basil pesto
- 1 handful of fresh basil
- 1 handful of spinach
- 2 small garlic cloves
- 2 tbs of nutritional yeast
- 1/3 cup of walnuts
- 2 tbs of olive oil
- Juice of 1 lemon
- 2 tbs of water
- Salt and pepper to taste
Preparation
Add all basil pesto ingredients to a food processor and process until smooth and creamy.
In a medium-sized pan, add gnocchi and olive oil. Cook on medium-low for about 10 minutes.
Remove gnocchi from the pan.
Mix in the homemade basil pesto with the gnocchi.
Serve and enjoy.
