Creamy Broccoli Pasta

Ingredients

  • 300 g pasta of choice
  • 1 head broccoli
  • salt

Sauce

  • 1 tbsp olive oil
  • 1 leek or onion
  • broccoli stems
  • 2 garlic cloves
  • 80 g cashews (or vegan cream)
  • 1/2 lemon, juice + zest
  • 4 tbsp nutritional yeast
  • thyme
  • salt & pepper
  • 1/2 cup plant milk (or water)

Preparation

  1. Soak cashews in hot water for 20 minutes.

  2. In a pan saute leeks, broccoli stalk and garlic.

  3. Blend all ingredients for the sauce until smooth.

  4. Cook pasta in well salted water. Two minutes before the pasta is al dente, add the broccoli florets and cook with the pasta. Save some pasta water, then strain and add pasta back to the pot.

  5. Add the sauce to the pot and mix, add pasta water as needed to thin out the sauce and bring back to heat if necessary.

  6. Serve with some olive oil, vegan parmesan or however you prefer and enjoy.
