Vegan Coconut Cauliflower Pasta
Ingredients
- 10 oz pasta of choice
- 2 cups cauliflower florets
- 1 cup coconut milk
- 3 tbsp nutritional yeast
- Juice of 1/2 lemon
- 1/2 tsp salt
Preparation
Cook the cauliflower for around 12-15 minutes until tender.
Meanwhile, in a different pan cook the pasta according to packaging instructions.
When the cauliflower is cooked, drain and rinse it and transfer it to a blender together with the coconut milk, nutritional yeast, lemon juice and salt.
Blend until smooth.
Mix together with drained pasta and serve.
