Broccoli Pasta with Chickpeas
Ingredients
- 3 cups pasta of choice
- 1 medium red onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups broccoli florets
- 3/4 cup coconut milk
- 1 tbsp nutritional yeast
- Salt to taste
- 1 can chickpeas, drained and rinsed
Preparation
Cook the pasta according to instructions on packaging.
Meanwhile, sauté the onion and garlic in a different pan in either water or oil.
When they soften, add the broccoli florets and tomato paste and continue to cook for a further 4-5 minutes.
Next add the coconut milk and nutritional yeast, stirring everything together.
Season to taste with salt and add the pasta together with 1/4 cup pasta water and the chickpeas.
Stir everything together for a few more minutes to allow the sauce to thicken and serve.
