Creamy Pasta with Adzuki Beans
Ingredients
- 7 oz pasta of choice
- 1 medium red onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, chopped
- 5 oz green beans, chopped
- 2/3 cup coconut milk
- 1 tbsp nutritional yeast
- 1 tbsp cornflour
- 1/2 tsp cumin
- 1/2 tsp pink Himalayan salt
- 1 can adzuki beans, drained and rinsed
- Black pepper, to taste
Preparation
Cook the pasta according to packaging instructions.
Meanwhile, add the onion and the garlic to a non-stick frying pan and sauté for 2-3 minutes with a splash of water.
Then, add the mushrooms and the green beans, sautéing for 3-4 minutes.
Now add the coconut milk, nutritional yeast, cornflour, cumin and salt, simmering over a medium heat for 2-3 minutes, stirring frequently, to allow the sauce to thicken.
Drain and rinse the pasta, transferring it to the frying pan together with the adzuki beans.
Season to taste with black pepper and stir until thoroughly combined.
Serve with garnishes of your choice.
