Vegan Pasta with Spicy Cashew Sauce

Ingredients

  • 10 oz pasta of choice
  • 1 tbsp olive oil
  • 1 large carrot, peeled and chopped
  • 1 cup mushrooms, chopped
  • 1 cup cashews, soaked
  • 1/2 cup plant based milk
  • 3 cloves garlic
  • 2 tbsp tamari
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tbsp nutritional yeast
  • 1/2 cup pasta cooking water

Preparation

  1. Cook the pasta according to instructions on packaging.

  2. Heat the olive oil in a large pan and add the carrot and mushrooms. Cook for 5 minutes, until softened.

  3. Meanwhile, add the cashews, plant based milk, garlic, tamari, paprika, cumin and nutritional yeast to a blender or food processor. Blend until smooth.

  4. Transfer the sauce to the pan with the vegetables, add the cooked pasta and 1/2 cup pasta cooking water.

  5. Stir everything together, then serve.
