Vegan Pasta with Spicy Cashew Sauce
Ingredients
- 10 oz pasta of choice
- 1 tbsp olive oil
- 1 large carrot, peeled and chopped
- 1 cup mushrooms, chopped
- 1 cup cashews, soaked
- 1/2 cup plant based milk
- 3 cloves garlic
- 2 tbsp tamari
- 1 tsp paprika
- 1 tsp cumin
- 2 tbsp nutritional yeast
- 1/2 cup pasta cooking water
Preparation
Cook the pasta according to instructions on packaging.
Heat the olive oil in a large pan and add the carrot and mushrooms. Cook for 5 minutes, until softened.
Meanwhile, add the cashews, plant based milk, garlic, tamari, paprika, cumin and nutritional yeast to a blender or food processor. Blend until smooth.
Transfer the sauce to the pan with the vegetables, add the cooked pasta and 1/2 cup pasta cooking water.
Stir everything together, then serve.
