Creamy Pasta with Mushrooms
Ingredients
- 10oz pasta of choice
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 7 oz mushrooms, chopped
- 2 tsp ginger paste or fresh grated ginger
- 1/2 can coconut milk
- 1/4 cup plant milk from a carton
- 2 tbsp soy sauce
- 1 tsp cumin
- 1 tbsp cornstarch
Preparation
Cook the pasta according to packaging instructions.
Meanwhile, cook the onion, garlic and ginger paste for a few minutes with the olive oil.
Add the mushrooms and sauté for 2-3 minutes more, until softened.
Pour in the coconut milk and plant milk together with the soy sauce and cumin, stirring briefly.
Drain and rinse the pasta, transferring to the frying pan and add the cornstarch.
Stir for a minute or two until the sauce thickens before serving.
