Vegan Creamy Mushroom Pasta

Ingredients

  • 10oz pasta
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 7 oz mushrooms, chopped
  • 2 tsp ginger paste or fresh grated ginger
  • 1/2 can coconut milk
  • 1/4 cup oat milk or any other plant based milk
  • 2 tbsp tamari
  • 1 tsp cumin
  • 1 tbsp cornstarch

Preparation

  1. Cook the pasta according to package instructions.

  2. Meanwhile, sauté the onion, garlic, and ginger paste for a few minutes in olive oil.

  3. Add the mushrooms and sauté for 2-3 minutes until softened.

  4. Pour in the coconut milk, oat milk, tamari, and cumin, and stir briefly.

  5. Drain and rinse the pasta, then transfer it to the frying pan and add the cornstarch.

  6. Stir for a minute or two until the sauce thickens, then serve.
