Vegan Creamy Mushroom Pasta
Ingredients
- 250g pasta (penne or fusilli)
- 200g fresh mushrooms
- 1 small onion
- 2 cloves garlic
- 200ml coconut cream or vegan cream
- 1 tablespoon olive oil
- Fresh parsley
- Salt and black pepper to taste
Preparation
Cook pasta according to package instructions. Drain and set aside.
In a pan, heat olive oil and sauté onions and garlic until translucent.
Add mushrooms and cook until tender.
Pour coconut cream into the pan, stirring gently. Season with salt and pepper.
Simmer for 5 minutes until the sauce thickens slightly.
Toss cooked pasta into the pan and mix well.
Garnish with fresh parsley if desired, then serve warm.
