Vegan Swedish Meatball Pasta
Ingredients
- 350-400 g pasta
- 2 cloves of garlic
- 1 onion
- 350 g cauliflower
- 350 ml coconut milk
- 1 teaspoon mustard
- 1 tablespoon soy sauce or 1 teaspoon salt for soy-free
- 1 tablespoon nutritional yeast
- Salt and pepper to taste
- 1 package vegan minced meat from Boon
- Fresh parsley
Preparation
Cook the pasta according to package instructions.
Meanwhile, cook the cauliflower until tender.
Heat some oil in a pan and fry the onion and garlic for 3-4 minutes.
Blend the cauliflower, onion, garlic, mustard, soy sauce, coconut milk, and nutritional yeast. Add pepper and salt to taste.
Form balls from the vegan minced meat and fry them for 5-7 minutes in a frying pan.
Serve the pasta with the sauce and meatballs, garnish with fresh parsley.
