Vegan Gnocchi in Zucchini Tomato Sauce

Ingredients

  • 750 g gnocchi
  • 1 onion
  • 4 cloves of garlic
  • 2 tablespoons tomato paste
  • 2 cans of Polpa with basil
  • 1 zucchini, shredded
  • 2 tablespoons nutritional yeast (optional)
  • pepper, salt and oregano to taste

Optional garnish

  • cherry tomatoes
  • pine nuts
  • fresh basil

Preparation

  1. Chop the onion and garlic.

  2. Sauté the onion and garlic in a pan until fragrant.

  3. Add tomato paste and cook for 1-2 minutes.

  4. Stir in the Polpa with basil and shredded zucchini.

  5. Season with salt, pepper, and oregano to taste, then simmer for 10-15 minutes.

  6. Cook gnocchi according to package instructions, usually by boiling until they float.

  7. Combine the cooked gnocchi with the sauce and stir in nutritional yeast if using.

  8. Serve with optional garnish.

Notes

  1. This recipe is vegan and soy-free, and it takes about 25 minutes to prepare.
