Quick and Delicious Chickpea Pasta with Zesty Veggie Sauce
Ingredients
- Diced onion
- Vegetable broth
- Chickpea pasta
- Garlic cloves
- Diced bell pepper
- Diced zucchini
- Jar of pasta sauce
- Nutritional yeast
Preparation
In a large skillet, cook diced onion over medium heat for a few minutes using a bit of vegetable broth.
While the onion cooks, prepare boiling water and cook chickpea pasta according to package directions.
Add minced garlic to the skillet and cook for another minute. Then, add diced bell pepper and cook for an additional minute.
Introduce diced zucchini and a jar of pasta sauce to the skillet. Allow the mixture to simmer until the chickpea pasta is cooked.
Once the pasta is done, drain it and add it to the skillet with the sauce. Mix in 2-3 tablespoons of nutritional yeast to combine flavors.
