Healthy Veggie Pasta Sauce

Ingredients

  • 2 cups (300 g) chopped tomatoes
  • 1 cup (150 g) chopped bell pepper
  • 1.5 cups (200 g) chopped zucchini
  • 1 small or medium chopped onion
  • 2 cloves minced garlic
  • 1/2 tsp Italian spice blend
  • Salt and black pepper to taste
  • 5.3 oz (150 g) vegan cream cheese
  • 1/2 cup (120 g) vegetable broth
  • 7 oz (200 g) uncooked pasta, gluten-free if needed
  • Chopped basil for garnish

Preparation

  1. Preheat the oven to 390 °F (200 °C) and grease a medium baking dish with a little oil.

  2. Add the tomatoes, bell pepper, zucchini, onion, garlic, Italian spice blend, salt, and black pepper, then stir to combine.

  3. Add the vegan cream cheese and pour in the vegetable broth.

  4. Bake for 20-22 minutes, or until the cream cheese is starting to turn golden.

  5. Meanwhile, cook pasta according to package directions, then drain most of the pasta water but keep a small amount.

  6. Remove the baking dish from the oven and blend the vegetables using an immersion blender or regular blender.

  7. Add the cooked pasta to the vegetable sauce and stir to combine.

  8. Serve in bowls, garnish with chopped basil and enjoy!
