Vegan Lentil Pasta with Marinara
Ingredients
- 1 box pasta
- 1 tbsp olive oil
- 1/2 onion diced
- 1 zucchini diced
- 2 cups cooked brown lentils
- 1 tbsp fresh minced garlic
- 1 jar marinara sauce
- 1/4 cup red wine
- violife Parmesan
Preparation
Cook the pasta according to package instructions.
Sauté the onion, zucchini, and garlic in olive oil until cooked.
Add the red wine to deglaze the pan, then stir in the cooked lentils and marinara sauce.
Simmer the mixture for 15 minutes.
Serve the sauce over the pasta and sprinkle with Violife Parmesan.
