Smokey Lentil Pasta Soup

Ingredients

  • 1 tablespoon olive oil or vegetable broth
  • 1 diced white onion
  • 3 minced garlic cloves
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried cilantro
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon chipotle powder
  • 2 cups rinsed brown or green lentils
  • 4 cups vegetable broth
  • Cooked pasta (to taste)
  • Salt and black pepper (to taste)

Preparation

  1. Heat 1 tablespoon olive oil or vegetable broth in a large saucepan over medium heat.

  2. Cook 1 diced white onion until translucent, about 5 minutes.

  3. Add 3 minced cloves garlic, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, 3/4 teaspoon dried cilantro, 1/2 teaspoon dried thyme, and 1/2 teaspoon chipotle; cook for one minute more.

  4. Add 2 cups rinsed brown or green lentils and cook for 3 minutes, stirring.

  5. Add 4 cups vegetable broth and bring to a boil.

  6. Reduce the heat and simmer for about 15 minutes, or until lentils are tender; add more broth as needed.

  7. Stir in desired amount of cooked pasta and more vegetable broth to taste.

  8. Season with salt and black pepper.
