Simple Pasta with Herb Garlic Sauce

Ingredients

  • Fresh herbs
  • Garlic
  • Water
  • Tomatoes
  • Olive oil
  • Pasta
  • Garlic breadcrumbs
  • Salt

Preparation

  1. Blend herbs and garlic with water until smooth, pour into ice cube trays or reusable cupcake molds, and freeze.

  2. Add a veg/herb cube to a saucepan over medium heat and melt until all the water has evaporated.

  3. Add tomatoes and olive oil, stirring occasionally, and cook for 8 minutes until tomatoes have reduced in size.

  4. Cook the pasta according to package instructions and strain.

  5. Add the cooked pasta to the sauce, stir to combine for 1 minute over low heat.

  6. Serve the pasta on a plate or bowl with garlic breadcrumbs, herbs, and salt.

Tips

  1. The frozen herb and garlic cubes can be used in any sort of soup, stew, curry, or pasta dish to add flavor and reduce waste.
