Simple Tomato Pasta with Slow-Roasted Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of good quality chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tbsp of olive oil
  • A generous pinch of salt and pepper
  • Pasta (for 3-4 servings)

Slow roasted tomatoes

  • About 250g cherry tomatoes
  • A generous drizzle of olive oil
  • Salt and pepper to taste

Preparation

  1. Slice the tomatoes in halves and place them on a baking tray with the flesh facing upwards.

  2. Drizzle with olive oil and sprinkle with salt and pepper.

  3. Place the tray in the oven and slow roast at 150 degrees Celsius for 35-40 minutes.

  4. Add oil to a large pan and heat it.

  5. Add the chopped onion and sauté for about 5 minutes until it starts to caramelize.

  6. Add the minced garlic and cook for another minute.

  7. Add the chopped tomatoes and mix everything together.

  8. Turn the heat down to a simmer, cover with a lid, and let the sauce cook for 20-25 minutes.

  9. Add the chopped basil and cook for another minute.

  10. While the sauce is cooking, cook your favorite pasta according to the packet instructions.

  11. Drain the pasta and add it to the pan with the tomato sauce.

  12. Sprinkle with fresh basil leaves and top with the slow roasted cherry tomatoes.

Tips

  1. Make sure not to roast the tomatoes at a higher temperature, as they may turn into sauce instead of keeping their shape like sun-dried tomatoes.
