Simple Tomato Pasta with Slow Roasted Cherry Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin chopped tomatoes or passata
  • A generous handful fresh basil leaves
  • 1 tbsp olive oil
  • A generous pinch salt and pepper

Slow roasted tomatoes

  • about 250g cherry tomatoes
  • olive oil, generous drizzle
  • salt and pepper, to taste

Pasta

  • pasta, for 3-4 servings

Preparation

  1. Slice the cherry tomatoes in half

  2. Place the tomatoes on a baking tray with the cut side facing up

  3. Drizzle with olive oil and sprinkle with salt and pepper

  4. Roast in the oven at 150 degrees Celsius for 35-40 minutes, avoiding higher temperatures to keep the tomatoes' shape like sundried tomatoes

  5. Heat olive oil in a large pan

  6. Add the chopped onion and sauté for about 5 minutes until caramelized and slightly brown

  7. Add the minced garlic and cook for another minute

  8. Add the chopped tomatoes and mix well

  9. Reduce heat to a simmer, cover, and cook for 20-25 minutes

  10. Meanwhile, cook the pasta according to package directions

  11. Stir in the chopped basil and cook for one more minute

  12. Drain the cooked pasta

  13. Add the pasta to the pan with the tomato sauce

  14. Sprinkle with fresh basil leaves

  15. Top with the slow roasted cherry tomatoes

Tips

  1. The tomato sauce can be served as is without blending
