Simple Tomato Pasta with Roasted Tomatoes

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of good quality chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tablespoon olive oil
  • A generous pinch of salt and pepper

Slow roasted tomatoes

  • 250 grams cherry tomatoes
  • Olive oil (generous drizzle)
  • Salt and pepper to taste

To serve

  • Your favorite pasta

Preparation

  1. Slice the tomatoes in halves and place them on a baking tray with the flesh facing upwards. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven at 150°C for 35-40 minutes.

  2. In a large pan, heat the olive oil and sauté the chopped onion for about 5 minutes until it starts to caramelize.

  3. Add the minced garlic and cook for another minute.

  4. Add the chopped tomatoes or passata, mix everything together, reduce heat to a simmer, cover with a lid, and cook for 20-25 minutes.

  5. Add the chopped basil and cook for another minute. The sauce can be served without blending.

  6. While the sauce is cooking, prepare your favorite pasta according to the package instructions.

  7. Drain the pasta and add it to the pan with the tomato sauce. Sprinkle with fresh basil leaves and top with the slow-roasted cherry tomatoes.

Tips

  1. Roast the tomatoes at a low temperature to maintain their shape and prevent them from turning into sauce, similar to sun-dried tomatoes.
