Roasted Potatoes with Garlic and Rosemary

Ingredients

  • 400g low-starch potatoes (uncooked)
  • 1 large red onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 rosemary leave
  • Salt to taste

Preparation

  1. Wash and cook the potatoes in pot with added salt to your taste for around 20 minutes until softened.

  2. In a pan heat the oil and sauté the onions, garlic and add the rosemary leaves as well.

  3. Place the cooked potatoes that you have beforehand sliced into smaller squares onto the pan and roast them until golden brown and crispy.

  4. Serve with some veggies and garnish with lemon.
