Easy Oven-Roasted Tofu and Vegetables

Ingredients

  • Tofu
  • Assorted vegetables
  • Olive oil
  • Garlic
  • Thyme
  • Salt
  • Pepper

Marinade components

  • Vegetable marinade or BBQ marinade (optional)

Preparation

  1. Preheat oven to 220°C.

  2. Select your favorite vegetables and dice them into small or medium pieces. Place them on a baking tray.

  3. Mix together olive oil, garlic, thyme, salt, and pepper. Drizzle this mixture over the vegetables.

  4. Chop the tofu into thick slices and marinate it for 30 to 60 minutes using a vegetable or BBQ marinade.

  5. Place the marinated tofu on the same baking tray and roast everything in the oven for 30 to 35 minutes.

  6. Alternatively, fry the tofu separately if preferred.

  7. Serve the dish combined with your favorite sauce or sauces.

Tips

  1. This can be made as a one-pan dish by roasting tofu and vegetables together.

  2. Experiment with different sauces to enhance flavor and variety.
