Shredded Tofu Tacos with Cilantro Lime Sauce

Ingredients

  • 1 block tofu
  • 1/3 onion, chopped
  • 1/3 red pepper, chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato sauce
  • al pastor seasoning blend
  • salt
  • pepper

Cilantro lime sauce

  • 1 bunch cilantro
  • 4 tbsp mayo or yogurt
  • juice of 1/2 lime
  • 2 cloves garlic
  • salt
  • pepper

Additional components

  • tortillas
  • coleslaw
  • cilantro

Preparation

  1. Press and shred your tofu.

  2. Add it to a pan with olive oil and toss on medium heat until golden brown.

  3. Add your seasoning and tomato sauce and mix well.

  4. Transfer to another dish.

  5. Cook the onions and peppers on medium heat.

  6. Add the tofu back to the pan and stir together.

  7. Add all the ingredients for the sauce to a blender and blend until smooth.

  8. Assemble your tortillas.

Notes

  1. This recipe makes filling for 6-8 tacos.
