Breakfast Tacos with Tofu Scramble
Ingredients
- 1 block firm tofu
- 10g nutritional yeast (optional)
- cumin to taste
- salt to taste
- pepper to taste
- garlic to taste
- paprika to taste
- turmeric to taste
- cayenne pepper to taste
- 1 cactus pad
- 1 tomato
- 1 serrano pepper
- green onions to taste
- 2 tomatillos
- fresh cilantro to taste
- onion to taste
- lime juice to taste
- tortillas
- avocado
Preparation
Crumble the tofu and mix it with nutritional yeast, cumin, salt, pepper, garlic, paprika, turmeric, and cayenne pepper
Sauté the tofu mixture along with cactus pad, tomato, serrano pepper, and green onions until golden brown
Boil the tomatillos and one serrano pepper
Combine the boiled tomatillos and pepper with fresh cilantro, onion, lime juice, and salt and pepper to taste to make the salsa
Heat up your favorite tortillas
Assemble the tacos by adding the tofu scramble, fresh salsa, and avocado
Tips
If you don’t eat or like tofu, substitute with chickpeas or potatoes
