Vegan Tofu Shakshuka Breakfast

Ingredients

  • 1 onion
  • 2 bell peppers
  • 6 large tomatoes
  • garlic
  • paprika
  • cumin
  • salt
  • tomato purée
  • canned chopped tomatoes
  • 1 block tofu
  • turmeric
  • coriander
  • black pepper
  • chilies
  • olive bread

Preparation

  1. Sauté garlic, an onion, two bell peppers, and 6 large tomatoes.

  2. Add paprika, cumin, salt, tomato purée, and canned chopped tomatoes.

  3. Blend a block of tofu with some salt and turmeric.

  4. Add small heaps of the tofu mixture into the pan.

  5. Top with coriander, black pepper, chilies.

  6. Serve with toasted olive bread.
